Pepino [From FLYCANDY With Love] It’s 5 O’Clock Somewhere


 

Ingredients

  • 2 1/4-inch slices English hothouse cucumber, divided
  • 3 tablespoons silver tequila
  • 3 basil leaves plus 1 sprig basil for garnish
  • 1 1/2 tablespoons fresh lime juice
  • 1 tablespoon Cointreau or other orange liqueur
  • 1 tablespoon pineapple juice
  • 1/2 tablespoon agave syrup (nectar)

Preparation

  • Using a muddler or the handle of a wooden spoon, mash 1 cucumber slice in a cocktail shaker. Add tequila, basil leaves, lime juice, Cointreau, pineapple juice, agave, and 1 cup ice. Shake several times to blend. Pour cocktail into a tall glass; garnish with remaining cucumber slice and basil sprig.
